Before Theo Leaves

Hi Everyone,

Theo is excited to keep you updated as he travels to Ethiopia with us, his mom and dad, to pick up his new sister.  He will be posting to his blog most everyday.  And, he will be uploading pictures of his travel as well as writing about his adventure.  It is possible that we, his mom and dad, might want to post too.  You can comment on Theo's blog if you have a gmail account.  If you don't have a gmail account, you can still follow what he is doing as he makes this trip.

Before we leave, I thought I would share a little bit about the food Theo will be eating in Ethiopia.  Ethiopians like to share their food at meal times.  They serve their food on a special bread called Injera.  The Injera is spongy and has holes.  Ethiopians use the Injera as silverware.  They wrap the food in Injera and eat it like a mini sandwich.  Injera is made from a grain called teff.  Teff is like wheat in Ethiopia and is used to make a lot of different things.  It is full of protein and calcium and iron.  Here is a picture of an Ethiopian meal served on Injera that Theo's dad and I took on our last trip to Ethiopia.  I am also giving you a link to a website that provides nutrition facts about teff.  Nutrition Facts about Teff

That is it for now.  We will post again soon.
